Aberystwyth Rarebit

welsh rarebit This tasty Welsh recipe is a timeless and simple classic.

With a number of high quality ingredients found in almost every kitchen this will taste great,

And if you don’t fancy toast, why not try it melted on a beef burger?






What You Need: (Makes 6 – 8 Pieces)

125ml semi skimmed milk
1 tablespoon white flour
400g strong Welsh cheddar – grated
150g wholemeal breadcrumbs
1 teaspoon of english mustard power
1 tablespoon Worcester sauce
100ml Penlon real ale
1 fresh free range egg plus 1 extra yolk
6 – 8 thick slices freshly baked bread – crusts left on

1. Heat the milk in a pan whilst whisking in the your flour until it boils.
2. Allow the mixture to bubble until it thickens slightly then reduce the heat as low as possible.
3. Add your cheese and stir until it melts, then add your breadcrumbs, mustard powder, Worcester sauce and ale.
4. Contine to stir until the mixture starts to leave the sides of the pan.
5. Once it reaches this point remove the mixture from the heat and leave to cool slightly.
6. Blend your mixture in a blender, and add the egg and egg yolk.
7. Blend for another minute with the egg.
8. Spread the mixture onto lightly toasted bread, and then top with salt and pepper to taste.
9. Grill the topped toast until browned and serve with a nice fresh salad on the side.

If you’re looking for a real treat then why not get some fresh flat mushrooms, cook them lightly in olive oil and then fill them with the cheesy mixture. Grill them until browned, and serve with grilled bacon on toast of a potato and onion rosti!
